1 1/2 oz. bourbon, rye or irish whiskey

3/4 oz. lemon juice

1/2 oz. simple syrup

1 egg white

crack egg and collect egg whites

add ingredients to shaker

dry shake (no ice) to emulsify egg white

add ice and shake again vigorously

strain into chilled rocks glass

optionally garnish with eye dropper of bitters
